This week Oliver and Christine Taylor are inviting us to enjoy their version of chicken salad. They made a traditional Canadian macaroni chicken salad with a Tico touch.
The Taylors shared a bit of their story and their reasons to pack up the lifestyle they had in Laval City in Montreal, Canada and start a new life in Tamarindo Beach, in Guanacaste.
Both are retired teachers from North Star Academy. And life in Canada is challenging every day. "Although the weather in the summer could be very pleasant, the winter is very harsh and cold," Oliver said. "The high tax in this area is getting as high as sixteen percent," Christine said.
Unbendable cold weather plus many taxes were exchanged for sunny days and awesome sunsets in Tamarindo Beach. I would say that they made a good move.
Canadians and Americans love their chicken macaroni dish. The Taylors have achieved a delicious combination of somewhat salty, sweet and sour flavors with different textures. So, let's go to the kitchen.
The easy-to-find ingredients, for 6 portions are:
First,
cook the macaroni for about 10 minutes
or more or until firm. Drain and
let cold. In a
bowl, mix the pasta with mayonnaise
(mix well). Add
condensed milk, cheddar, onion, and
carrot. Mix well again. Add
chicken, pineapple and mango, eggs and
raisins. Mix again. Season
with salt and pepper and adjust
according to taste. Chill for at least 1 hour in a fridge.
This pasta salad works perfectly as a side dish that can accompany many other foods such as buffalo hot chicken wings, hamburgers, grilled meat of any kind, fried chicken, barbecued ribs or roast corn. You name it!
